 The last ten years has seen a steady increase in the use of Australian native produce. Kangaroo, crocodile, emu, wattle seeds, quandong fruits and herbs are just some of the indigenous ingredients being used today.

To cater for this trend we have introduced what will be the first of many Australian herbs to come. These ingredients are being used in purely australian dishes and also combined with overseas produce to create an interesting Australian based cuisine.
